What are some of your favorite chicken recipes?

Middle Eastern Coffee Chicken

1 large Chicken, cut up and cleaned
3/4 cup strong brewed coffee
1/2 cup Ketchup
3 tbl Soy Sauce
3 tbl Lemon Juice
1 tsp Lemon Zests
1 tbl Extra Virgin Olive Oil
2 tbl Dark Brown Sugar
2 tbl Honey

Cup up chicken and soak in brine solution for two hours minimum. (1/2 Cup kosher salt mixed into 2 gallons cold water - in sink or large bowl)
Mix all ingredients in pot and bring to bowl and reduce to low simmer for 20 minutes or until about half its volume.
Rinse chicken and put into casserole dish or other baking dish.
Pour mixture over it.
Bake at 350 degrees, uncovered, for 1 hour.

Chicken-Parmesan Nuggets

1 - 2 pounds of boneless chicken fillets, brined, washed and patted dry, cut into bite sizes
2 cups bisquick or other biscuit mix
1 16oz bottle of beer
1 cup +/- to taste, Parmesan cheese, grated

Mix beer, bisquick and cheese.
Dip chicken into batter and fry in deep fryer at 350 until golden brown.
Serve hot.

Apricot Chicken
2 cans Apricots

2 packets Onion soup mix

Boneless Chicken breasts, skin on. Other chicken cuts with bones can be used.

Pre heat the over to 180 C. Place chicken in casserole dish. Add Apricots and soup mix. Cook for 1 hour.

For those who are metrically challenged, 180 C = 350 F. I had to look it up myself. Everything here in the US is in F degrees. I will try to remember the metric conversions on my recipes in the future as well.

We have a product here called "Very Very Teriyaki" that is made by a kosher company. I made a teriyaki chicken bog the other night by cooking the chicken pieces, cut into really small bites, in the "very very teriyaki" sauce. At the same time, I cooked three cups of rice and added a bag of frozen green peas and carrots. Stirred the chicken in with the sauce and let it simmer until the rice was done.

I had Chicken Teriyaki on Monday. the butcher said grill or pan fry. He didn't say cut it in strips before pan frying

Well, chicken Teriyaki can be prepared either way and can be cooked whole or in strips or in bites.

Teriyaki anything is always good on rice. They just go together. Like peas and carrots, salt and pepper, etc....

Reminds me of my dragon knuckles. Bacon wrapped chicken breast bites marinated in teriyaki sauce and then baked.
