French Plum Cake

6 - 8 Fresh or Tinned Plums
3 Tablespoons Sugar
300g butter
1 1/2 cups of Sugar
3 Eggs
Grated Lemon Rind of 1/2 Lemon
1-Teaspoon Vanilla
1 Cup of Milk
3 1/2 Cups of Flour
1-Teaspoon Baking Powder

Slice plums and put in bowl with the 3 tablespoons of Sugar - let stand.

Meanwhile: Cream butter and Sugar. Add Eggs, Grated Lemon Rind and Vanilla. Stir in Milk, Flour and Baking Powder. Spoon mixture into large spring tin and arrange fruit on top (press in lightly).

Bake in a pre-heated moderate oven.
