Pork & Red Capsicum Skewers

Marinade

1/4 cup Balsamic Vinegar
Juice & rind of 1 Lemon
1-Tablespoon chopped fresh Mint
Salt
A pinch of Red Pepper flakes
2 cloves Garlic crushed
2 tablespoons Olive oil

Combine ingredients in a shallow dish or plastic ice cream container.

400 grams of shoulder Pork
Red Capsicum
Skewers, pre soaked in water

Cut pork into 12 square pieces. Cut same number of capsicum pieces. Place pork and capsicum allow to marinade for while in the fridge. Drain and place alternating on skewers, cook on preheated grill turning once until just cooked through, basting with reserved marinade. Serve with lemon or lime wedges.
