One Egg Fruit Cake

1/2 oz Butter
1 Large Egg
1 tsp Baking Soda
1 1/2 lbs Mixed Fruit
2 Cups Flour
1 Good cup Sugar
1-Cup Milk
1-Teaspoon Vinegar
1-Teaspoon Lemon Essence
1-Teaspoon Orange Essence
1-Teaspoon Vanilla Essence
1-Teaspoon Almond Essence

Pre heat oven to 190C. Line deep square tin. Cream Butter and Sugar. Add egg, beat well. Then add Soda dissolved in milk, vinegar and essences. Then add flour and fruit. Bake for two hours. Test with knife to ensure cooked. Additional cooking time may be needed.
