Marinated Octopus
Marinade
1/2 cup Olive Oil
1/4 cup White Wine
2 crushed cloves Garlic
1 tablespoon chopped Thyme
1 tablespoon chopped Oregano
Juice of 1 Lemon
Salt and peper to taste.
Combine the ingredients in a glass pouring jug.
Chop of tentacles and place in boiling water and cook for only 6-7 minutes, do not over cook or will go tough., cool quickly in cold water and skin while still warm, cut into bite size pieces and place in marinade overnight in refrigerator. Serve on lettuce.
