Fabulous Fruit Flan

350gm flake pastry
8 plums or peaches or nectarines or apricots
4 eggs
150 gm icing sugar
100 gm hazel nuts, ground
100 gm almonds, ground
few drops almond essence

Line a 25cm flan tin with the pastry.
Wash fruit and cut in half. Stone.
Place fruit cut side down on the pastry base.
Beat the eggs in a bowl, then add the remaining ingredients. Pour this mixture over the fruit. Bake in a pre-heated oven, (170 deg. C) for 50 to 60 minutes, or until risen, firm and golden brown.

If wanted, you can make this without the fruit, in a slightly smaller tin. Still makes a very nice, but considerably cheaper dessert.

Best served with plain yoghurt, or cream.
